Beet and Goat Cheese Salad
One of our all time favorite salads is this Beet and Goat Cheese Salad!!! The flavors just explode on your tongue with every bite!!

They are packed full of immune boosting nutrients including vitamin C and folate, a crucial nutrient needed for fetal development! Beet and Goat Cheese Salad
Ingredients
- lb beets (any color)
- 6 Tbsp extra-virgin olive oil
- 4 Tbsp fresh lemon juice
- 2 tsp Dijon mustard
- 2 Tbsp honey
- 1/2 tsp ground cumin
- Pink Himalayan sea salt
- Black pepper
- 4-6 oz goat cheese
- Greens of your choice (adding in the beet greens is a nutrient upgrade!)
Instructions
- Chop up beets to desired size (bake, boil, or pre-cooked are great options), set aside
- Prepare dressing:
- In a bowl, use a whisk to combine the lemon juice, mustard, honey, and seasonings. While whisking vigorously, drizzle in the olive oil until emulsified. Season with salt and pepper to taste.
- Rinse greens and add beet greens if available.
- Toss greens, beets, and dressing until fully coated. Then add in the goat cheese. The longer this can “sit” and marinate, the better (up to 30 mins) – will help to enhance all the flavors!
- Eat and ENJOY!
